Material :
• 250 g of butter
• 125 g of syrup, "routine lys" from dansukker
• 250 g brown sugar
• 2 teaspoons of potassium carbonate, K2CO3 (Potaske)
• 1 tablespoon cold water
• 3 teaspoons of cinnamon
• 1 teaspoon ground clove
• 2 teaspoons of ginger powder
• 1 teaspoon of allspice
• 60 g candied orange peel
• 25 g of raw pistachio
• 150 g of almonds
• 500 g wheat flour
How to Make:
1. Melt the butter, syrup, and brown sugar into a pan over medium heat up to approximately 70 degrees Celsius or 160 ℉.
2. Mix the spices such as cinnamon, cloves, ginger, allspice and flour. Then add the peel of oranges, almonds, and pistachios.
3. Dissolve potassium carbonate (potasken) in the water afterwards, mix it to the previous dough.
4. Mix all the ingredients together in a mixer until the mixture is well blended.
5. Put the dough into a baking sheet that has been lined with parchment paper. After the pan is fully loaded, cover the dough with a piece of parchment paper. Chill at room temperature until the dough of the brunkager hardened.
6. After it hardened, cut the dough with a sharp knife or if you want to make another shape, you can mold the dough as desired. Afterwards, bake on a baking sheet that has been coated with parchment paper on an oven that has been heated to a temperature of 355 ℉ (180 ℃) for 9-13 minutes.
7. Once cooked, place the Brunkager in an airtight container.
